Chicken Chow Mein



Chow Mein is the modified word for the pure Chinese word chio mian. It is a very popular Chinese dish that is included in the top list of Chinese food and is available in almost all the countries of the world. Indian, American and Asian cuisines also include Chow Mein cooked in different styles and ways. In pure Chinese cuisine, it consists of stir fried noodles cooked in different sauces, vegetable and chicken.

Ingredients
·         Chinese Noodles 1 packet
·         Boneless Chicken (cubed)1/2 kg
·         Salt as per taste
·         Garlic Paste 1 tsp.
·         White Pepper Powder 1 tbsp.
·         Sugar 1 tbsp.
·         Chinese Salt 1 tsp.
·         Spring Onions (chopped) 3-4
·         Vinegar 4 tbsp.
·         Soya Sauce 4 tbsp.
·         Corn Flour 2 tbsp.
·         Cooking Oil 4-6 tbsp.
·         For Garnish:
·         Green Chilies (chopped)3-4
·         Chili Sauce as required
 
Cooking Directions
 
1.      Break the noodles into small pieces and add to 10-12 cups of boiling water.
2.      When tender, strain and soak the noodles in cold water to cool.
3.      In a wok, heat Cooking Oil on medium heat for 2-3 minutes and sauté garlic for a minute.
4.      Add chicken and stir-fry on high heat so the water on the chicken dries completely.
5.      Add noodles, salt, white pepper, sugar, Chinese salt, Soya Sauce and vinegar.
6.      Mix well on high heat. Add spring onions and sprinkle corn flour.
7.      Stir vigorously for 2-3 minutes and remove from heat.
8.      Garnish and serve hot with green chilies and chili sauce kept on the side.
